Whipped Tofu Creme Topping
Yield 1-1/2 cups
1 pkg silken style extra firm tofu
1 Tb fresh lemon juice
2 to 4 Tb honey, maple or other sweetener (such as frozen apple juice
concentrate or brown rice syrup)
1/4 tsp cardamom, optional
Blend thoroughly in blender or food processor.
