Recipe Archives->Vegetarian->Walnut Loaf
Walnut Loaf 1/2 C finely chopped onion 1 C finely chopped celery 1 Tbs oil or water 1 1/2 C walnuts, ground in blender 3 C whole-wheat bread crumbs 1/2 C chopped parsely 1 C tomato juice 2 eggs, beaten 1/2 tsp salt Preheat oven to 350 degrees. Saute onion and celery in oil or water until transparent. Transfer to a large bowl & stir in remaining ingredients. Spoon mixture into greased 8x4 loaf pan. Bake for 55-65 minutes. Allow to sit in pan 5-10 minutes before turning out to serving platter. Serves 6-8. Serve w/mushroom gravy. Note: For vegan version, omit eggs, bake in casserole and serve w/spoon.
