Carrot, Apple, and Hummus Wrap
2 sandwich wraps, 12"
1 cup hummus
1 cup carrots, grated
1 Gala apple, thinly sliced
1 cup baby spinach, tightly packed
Dividing evenly, spread hummus on wraps, leaving a 2 inch border.
Layer with grated carrots, apple, and spinach, arranging ingredients
in the center. Fold in sides about 1 inch, then roll tightly from
one of the open ends to enclose filling. Wrap in waxed paper, if
desired, then wrap in plastic. Refrigerate until ready to serve.
