Savoury Vegetarian Loaf
 
3 oz soy mince
1 oz tinned sweetcorn, drained
1 plum tomato, chopped
1 tbsp cheese and onion instant mashed potatoes
1 oz garden peas
1 egg, beaten
2 oz breadcrumbs
1 oz plain flour
1 tsp Marmite yeast extract
pinch ground black pepper
pinch salt
pinch celery salt
half an onion, finely chopped
 
Make up a small amount of vegetarian gravy and soak the soy mince
for 30 minutes.  Drain.

Soften the onion in a saucepan with a little oil.  Add all the
other ingredients and blend thoroughly while heating gently.

Grease a loaf tin and pour contents in.  Cover with greased foil
or greaseproof paper.  Cook for 45 minutes at 190 deg C.  Remove
cover and cook for a further 15 minutes.

Serve with boiled potatoes, cabbage/peas, any other preferred
vegetables and vegetarian gravy.
