Veggie "Meatballs" Skin and deseed two small eggplants as if you were preparing to make eggplant parmesan. Chop eggplant into fine pieces. Add 2 cups Italian bread crumbs, 2 or 3 minced garlic cloves, 1 cup grated mozzarella or soy cheese, 1 1/2 cups milk or water, and a half can tomato sauce. Combine all the ingredients using your hands to mix. Form into small or medium sized "meatballs." Place on a greased cookie sheet and bake for 25 minutes at 400 degrees or until brown.
