Gyros Soak for 10 minutes: 1 cup TVP chunks or slices 1 TBSP ketchup 1 cup boiling water Cover tightly and microwave on high for 5 minutes or add 1/2 cup of water or vegetable stock and simmer on top of stove 15-20 minutes until tender. Chill. Mix for dressing: 1/4 cup olive oil 1 TBSP wine vinegar 1 tsp each salt, basil and oregano 1/4 tsp pepper Mix marinade with cooked drained TVP (if desired, double the amount of dressing and soak TVP overnight). Prepare the vegetables: 1 large tomato, diced 1 cucumber, thinly sliced 1/2 cup red onion, chopped 1/4 cup kalamata olives, sliced 2 TBS fresh mint leaves, chopped 3 cups lettuce, shredded Have ready, warmed in oven if desired: 6 pita breads, cut in half Toss the veggies w/ the TVP and fill pita pockets.
