CREAMY TOMATO ONION SOUP 3/4 c tofu, drained 3/4 c onions, chopped 3 tb veg-chicken or vegetable stock 3 c pureed fresh tomatoes or canned unsalted tomatoes w/juice 1 ts sweet basil 1 tb garlic powder 1/4 ts coarsely ground pepper In a medium saucepan, saute onions in stock until transparent. Add pureed tomatoes along with next three ingredients. Simmer 10-15 minutes. In a blender or a food processor, process tofu until smooth and stir into the tomato mixture. Simmer and serve hot.
