Tofu Remoulade 8oz. extra-firm silken tofu 2 T fresh lemon juice 2 T cider vinegar 2 T extra-virgin olive oil 2 T canola oil 1/2 t dijon mustard 1/2 t salt or to taste black pepper to taste 1 t coarse mustard 2 small cloves garlic, minced 2 T chopped green onion 1 T capers 2 t minced fresh parsley 1 t minced fresh tarragon or 1/4 t dried veg. stock or water as needed In food processor or blender combine tofu, lemon juice, vinegar, olive oil, canola oil, dijon mustard, salt and pepper. process until smooth. Add coarse mustard, garlic, green onion, capers, parsley and tarragon. Pulse several times just to blend. Taste & adjust seasonings if desired. Use as a vegetable dip.
