Tofu Spaghetti Balls
     
3/4 pound firm tofu, mashed
1/2 cup fine breadcrumbs
1 1/2 Tbsp. creamy peanut butter
3 Tbsp. soy sauce
1/4 cup parsley, minced
1 small onion, minced
1/2 tsp. dry mustard
1/2 tsp. black pepper
 
Work mixture of all ingredients together with your hands until
thoroughly blended.  Roll into 1-1/2 inch balls.  Roll balls in
flour and fry in hot oil until browned all over. (Treat them more
gently than you would hamburger meatballs as they do not hold
together quite as well).  Drop into simmering spaghetti sauce and
cook for 5-10 minutes until heated through.  Serve over spaghetti.
