Tofu Gravy

Tofu/Cottage Cheese in Tomato Gravy
  
300 gm cottage cheese and/or tofu
500 gm red tomatoes
1 onion, finely chopped
1 Tbsp oil
1 tsp minced ginger and garlic
1 tsp oregano
1 tsp paprika powder
1 tsp pepper powder
1 tsp sugar
Salt to taste
1 Tbsp fresh cream
1 Tbsp butter
Fresh coriander for garnishing
 
Boil tomatoes, peel and chop into big pieces. Pour oil in a wok,
put onion and fry till transparent. Add tomatoes and cook till a
thick gravy is formed. Add salt, paprika powder, pepper powder,
minced ginger and garlic, oregano, sugar and butter.  Cook for 5
minutes. Add cottage cheese/tofu pieces cut into 1" squares.  Boil
for another 5-10 minutes. Garnish with fresh cream and fresh
coriander. Serve hot.
