Cheesy Zucchini Puff (tofu) 3 medium zucchini, cut in slices or chunks 4 ounces grated Cheddar cheese (1 c) 12 ounces frozen tofu, thawed/rinsed/squeezed dry & crumbled 2 eggs, lightly beaten 3/4 teaspoon salt 3/4 teaspoon dill weed 1/2 cup croutons Preheat oven to 350 degrees. Oil a shallow 1 1/2 quart casserole. Steam zucchini until tender. Mix cheese, tofu, eggs, salt, dill, and croutons. Add and gently stir the well drained zucchini. Turn into casserole. Bake 30 minutes. Serves 3 as a main dish, 6 as a side dish. Printable version: tofu-casserole.txt.
