Soy Burgers Yield: 4 servings. 1/2 pound firm tofu, drained 1/4 cup dry bread crumbs 1/4 teaspoon salt 1/4 teaspoon pepper 1 large egg white, lightly beaten 1 tablespoon olive oil 4 curly leaf lettuce leaves 4 whole wheat hamburger split buns 4 tomato slices 4 yellow onion slices Cut tofu cake into 8 slices. Gently press tofu slices between paper towels until barely moist. Combine bread crumbs, salt and pepper in a shallow dish; stir well. Dip tofu slices in egg white, and dredge in bread crumb mixture. Heat olive oil in a large nonstick skillet over medium heat. Add tofu slices, and cook 3 minutes on each side or until browned. Place lettuce leaves on bottom halves of buns; top with tofu slices, tomato, onion, and top halves of buns. Serve immediately. Printable version: tofu-burgers10.txt.
