Recipe Archives->Vegetarian->Squash Pie
No-Bake Squash Pie 1/2 cup dried currants 1/2 cup dates, chopped 1/4 cup hazelnut liqueur 1 cup coconut milk 1/2 cup brown rice syrup 1 teaspoon cornflour 1 tablespoon gelatine or agar-agar 300g firm tofu 1/4 cup squash puree 1/2 teaspoon cinnamon 1/4 teaspoon cardamom powder 1/4 teaspoon nutmeg Simmer the first 7 ingredients together for 10 minutes. Blend with remaining ingredients. Pour into a prepared pie crust. Refrigerate for 3-4 hours before serving. Printable version: squash-pie.txt.
