Soybean Cheese Casserole
 
1 c. veg. broth
1 medium onion, chopped
1 medium green pepper, seeded and chopped
1 garlic clove, minced
1 1/4 c. diced canned tomatoes
2 tbsp. tomato paste
12 oz. cooked dried soybeans
1 tsp. basil
1/4 tsp. oregano
salt and pepper
4oz. sharp cheddar cheese, grated
2 sliced bread, in crumbs

Rehydrate and cook beans 'til tender.  In a saucepan, combine broth,
onion, green pepper and garlic.  Cook til veggies are tender.  Add
tomatoes and paste and seasonings.  Cook til slightly thickened.
Add soybeans.  Transfer mixture to 1 1/2 quart casserole. In a
small bowl, combine cheese and crumbs.  Sprinkle over tomato mixture.
Bake at 350F for 40 minutes or 'til golden.
