Seitan Stroganoff

Vegan Seitan Stroganoff 

2 lbs seitan, diced
1 large onion, diced
1 lb mushrooms, sliced
1/4 cup sherry or white wine
3 Tbsp olive oil
Salt and Pepper to taste
10 oz. package silken tofu
1 tsp lemon juice
1 Tbsp tahini

Heat oil in large pot.  Add onions and saute until clear.  Add
mushrooms, cook until liquid is extracted.  Add sherry or wine and
cook for 5 minutes with salt and pepper.  Add seitan and cook for
5 more minutes.

To make tofu sour cream:  In a food processor or blender add silken
tofu, lemon juice, tahini, and salt, process until creamy...

Add "sour cream" to seitan mixture.  Simmer.  (should tofu seperate
simply add more tofu cream and stir and simmer gently.)  Garnish
with fresh parsley.  Serve over pasta or noodles.
