Seitan Sloppy Joes
1-1/2 pound seitan
1 large onion, chopped (1 cup)
4 clove garlic, minced
6 ounces can hot-style tomato juice
1/2 c catsup
1/2 c water
2 TB brown sugar
4 TB chopped canned jalapeno pepper
1 tsp hot sauce
1 TB prepared mustard
2 teaspoons chili powder
1 teaspoon veggie-Worcestershire sauce (or use a fine light shoyu)
8 hamburger-style buns
shredded low fat cheese
Marinate the Seitan (in equal parts tamari, and balsamic vinegar
with 3 cloves and lots of hot sauce) for at least 2 hours. Drain,
crumble and saute with the onion, and garlic for about 10 minutes
over medium low heat.
Meanwhile, in a 3 1/2 or 4 quart crockery cooker combine tomato
juice, catsup, water, brown sugar, jalapeno peppers, hot sauce,
mustard, chili powder and Worcestershire sauce. Stir in seitan
mixture, cover and cook on low for about 11 hours.
Finally, toast buns; spoon seitan mixture over buns and sprinkle
with cheese. Place under a broiler to melt the cheese. The new vegan
cheese
