Avocado and Walnut Salad Serves 2 2 large avocados precooked and cooled black quinoa 100 g feta cheese 100 g walnuts 8 cherry tomatoes, halved fresh baby spinach balsamic vinegar Prepare two plates and put as much quinoa as you like on the plates. On top of the quinoa, place some fresh baby spinach, cherry tomates and peeled, sliced avocado. Scatter over feta cheese cut in small pieces. Sprinkle with walnuts. Dress with balsamic vinegar.
