Mini Vegetable Quiche Yield: 12 12 3" tart shells 1 1/2 cup asparagus or broccoli, diced and cooked 1/2 cup + 2 tbsp 1% milk or soy milk 2 slices Yves The Good Slice Soy Cheese, Swiss 1 large egg white or medium egg, beaten 1/4 tsp salt 1/4 tsp black pepper, ground pinch nutmeg, ground 1/8 tsp cayenne pepper (optional) Divide diced vegetables into 12 tart shells. Microwave soy cheese with 1/4 cup of milk. Stir it until smooth and slowly whisk in remaining milk, egg white or egg, salt, pepper, nutmeg and cayenne pepper. Fill tart with cheese-milk mixture and bake in 375 F preheated oven for 15 minutes or until custard sets and slightly browned on top. Serve hot or cold. Variations: Spinach and mushroom: Sauteed mushrooms, onions and spinach. Quiche Lorraine: Sauteed onions and Yves Veggie Bacon. Printable version: quiche09.txt.
