African-Style Pineapple-Peanut Stew 1 medium onion, chopped 1 clove garlic 20 oz can crushed pineapple 1 bunch spinach/kale/swiss chard 1/2 c peanut butter few drops Tabasco or pinch cayenne Saute onion, garlic in a little oil until browned. Add pineapple and juice, simmer 5 minutes. Meanwhile, tear up greens. Add to pot, stir and cover, simmer until wilted. Add peanut butter and Tabasco (or cayenne). Simmer another 5 minutes. Cous-cous: pour boiling water on 1 c dried cous-cous until just moist. Allow to stand a few minutes. Serve stew on top of cous-cous. Recipe suggest chopped peanuts and chopped green onions on top.
