BROCCOLI AND CHILI OMELET Steam about one head of broccoli and drain (Do not turn to mush). In a large bowl beat some eggs (amount varies depending on how many you are feeding). Beat the eggs with a few chopped fresh Thai chili peppers (more or less depending on your taste), a couple of tablespoons of tamari, one half cup of chopped roasted peanuts (lightly salted or no salt) and a few tablespoons of chopped fresh coriander. Beat well and then add the broccoli which has been finely chopped. Mix gently. Heat a non stick skillet, add a little oil and then add the egg mixture. Allow to cook until it is set and browned on the bottom (the top will be a little loose but not much). Slide the omelet on a plate, brown side down. Place the pan over the plate and turn quickly (requires a little coordination). Cook until the other side is browned. This side will cook quickly so pay close attention to it. Slice the omelet into wedges. Serve with Jasmine rice, tomato wedges, thinly sliced onion, cucumber and fresh lime wedges. A great condiment is to chop several Thai chills, about a quarter cup of rice vinegar, a little sugar, lime juice and a couple of crushed cloves of garlic. Let it marinate for several hours.
