Marinated Mushroom Melts 150ml olive oil 2 tablespoon fresh rosemary 4 tablespoon fresh parsley 2 crushed cloves garlic 16 large mushrooms, stems removed 8 large spinach leaves, stems removed 150 raclette or mozzarella cheese cubed 4 tablespoon sun-dried tomato paste seasoning as desired Marinate oil herbs and garlic with mushrooms for 30 mins. Put cheese on spinach leaves and make into parcels. Spread tomato paste on mushrooms. Skewer together spinach parcel, and mushrooms and grill on barbecue for 10 to 15 minutes.
