Mock Ricotta 03

'Stedda' Ricotta
 
1 pound firm tofu
1/3 cup olive oil
1/2 tsp (or more) ground nutmeg
1/2 tsp seasoned or regular salt
1/4 tsp salt-free seasoning
 
Place 3/4 of the tofu and the remaining ingredients in a food
processor or blender.  Blend until thick and smooth.  Mash the
remaining tofu into the blended mixture.

Yield 2-1/2 to 3 cups
