Easy Lemon Pudding 1 lb. silken (soft) tofu 1 1/2 - 2 tbsp. lemon juice 3/4 - 1 tsp. lemon rind 1/4 cup sugar 2 tsp. vanilla Put all ingredients in a food processor and process until completely smooth. Chill thoroughly. Note: If you use the full quantity of lemon juice/rind, the flavour will be quite intense. You might want to try using the smaller quantity and adjust to your tastes.
