Vegetarian/Macrobiotic Lemon Pie (Dairy free and sugar free) 1 cup rolled oats 1 cup whole wheat pastry flour 1/2 cup chopped walnuts pinch sea salt 1/2 cup corn oil 1 Tbsp. brown rice syrup 3 cups apple juice 1/4 cup lemon juice pinch sea salt 1/2 cup rice syrup 2 tsps. grated lemon rind 1 tsp. vanilla extract 4 Tbsps agar flakes 4 Tbsps kuzu Mix together oats, flour, walnuts, salt, oil and rice syrup. Press into a pie plate. Bake 15 to 20 minutes at 325 degrees. Blend all of the filling ingredients together except for the agar-agar flakes and the kuzu. Put this mixture into a saucepan, add the agar-agar flakes and bring to a boil. Lower the flame so that mixture is gently boiling. While the agar-agar flakes are dissolving in the saucepan, dissolve the kuzu in a little bit of cool water and stir into the mixture, stirring until the mixture becomes clear and is thickened. Let this cool about 10 to 15 minutes and pour this filling into the pie shell and let cool until it becomes firm (about 1 1/2 hours). Printable version: lemon-pie.txt.
