Key Lime Tofu Pie 2 boxes Mori Nu Silken FIRM Tofu 2 packs of Tofu mates Vanilla Pudding mix about 3 Limes (DO NOT use the bottled lime juice) 1 baked pie crust - graham cracker crust is okay Juice the limes. Grate a generous amount of the rind (reserve on a little dish). Put Tofu in food processor with lime juice - the goal here is to sub the lime juice for the little bit of water the pudding recipe calls for adding water as needed to make the 1/4 cup total. Blend in processor until smooth. Add one pudding mix & blend. Add second pudding mix & blend. Taste result - add lime rind to taste (I like mine really limey & use about 2 teaspoons of fresh rind). Pour result into pie crust, smooth & make pretty the refrigerate overnight. Variants that we tried - 1 package of chocolate, 1 package of cappucino flavor, blended seperately & then marbled together. Used cold coffee as the liquid for both flavors. Looks cool, tastes great. Lemon pie using the lemon flavor of pudding. Printable version: keylime-tofu-pie.txt.
