Kale and Potato Soup Serves 6 1 large Spanish onion 1/3 cup olive oil 2 cloves crushed garlic pinch hot pepper flakes 3-4 medium potatoes 1 qt water 1/2 - 3/4 lb kale 3-4 Tbsp shoyu 1/2 Tbsp salt dash Tabasco pepper Peel and chop onion and turn in to soup kettle. Add olive oil, garlic, pepper flakes. Saute. While onions are cooking, peel potatoes and cut into 1 1/2" pieces Add potatoes to soup pot with water. Bring to a boil, then lower heat and simmer until potatoes are soft. Use a potato masher to crush potatoes a little. Wash kale. Washing with hot water will get rid of any aphids you may find on unsprayed kale. Remove tough stems, roll leaves up tightly, and shred with a chef's knife. Add kale to soup with shoyu, salt, Tabasco. Simmer until kale is done. Add freshly grated pepper and correct seasonings. Note: I add 6 ounces smoked tofu or soy bacon.
