Eggplant Burgers Peel and slice large eggplant 1/2" thick. Soak in salted water for 1/2 hour. Peel and slice vidalia onions in 1/2-inch rings. Put 2 toothpicks in each slice to hold rings together. Drain eggplant and pat dry. Brush eggplant with oil. Grill eggplant and onion to lightly brown. Brush BBQ sauce on both sides of eggplant and onion. If desired, put cheddar slices on onion and melt.
