Low-Fat Greens Makes 4 servings. 1/4 cup vegetable broth 1 teaspoon olive oil 2 cloves garlic 1/4 cup chopped onion 1 Tablespoon prepared mustard 2 Tablespoons prepared horseradish 6 cups shredded greens (collard, kale, mustard, etc.) 1/4 cup low-fat sour cream (optional) Briefly saute garlic and onion over low heat in broth and olive oil. Stir in mustard, horseradish, and raw shredded greens. Cover and cook over low heat until wilted. Stir occasionally to prevent burning. Makes a great accompaniment for vegetables burgers or cooked beans. Printable version: greens01.txt.
