Green Beans and Chickpeas in Groundnut Sauce serves about 4 1 can chick peas 1 small onion, chopped 4 C french-cut green beans 1 inch piece ginger, chopped 2 cloves garlic, chopped 6 T water 1 T oil 1/4 C peanut butter 1 C coconut milk 2 C chopped tomato, about 2 medium, peeled 2 t curry powder 1 t salt 1 t coriander 1/4 t red pepper flakes 1/2 t basil Saute onion, garlic, and ginger in oil and 2 T water. Add curry powder, salt, coriander, and pepper and stir till hot. Add green beans and stir till coated. Add coconut milk, peanut butter, and remaining 1/4 C water. Boil. Reduce to a simmer, stir in tomatoes, basil, and drained can of chick peas. Simmer 20 minutes, uncovered. Serve over rice. Printable version: greenbeans-peanuts.txt.
