Gingerbread Pancakes

1 cup unbleached white flour
1/2 cup oat bran
1 1/2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon sea salt
1/4 cup dried currants
1 cup soymilk 
2 tablespoons blackstrap molasses
1 tablespoon safflower Oil

In a bowl, mix all dry ingredients. In a liquid measuring cup,
combine the soymilk, molasses, and oil. Stir liquid into dry
ingredients, just until combined. (Batter will be fairly thick.)

Heat a non-stick griddle or skillet. For each pancake, drop 1/4
cup batter onto griddle. Cook over medium-high heat until edges
begin to look dry, about 1 to 2 minutes. Flip and brown on other
side. Serve with warm applesauce or maple syrup.
