Dairy-Free French Toast 250g firm tofu, rinsed 1/4 tsp cinnamon 3/4 cup vanilla soy milk 6 half-inch slices w.w. bread 1/4 tsp salt 2 tbsp canola oil In blender, puree tofu, soy milk, salt and cinnamon until smooth (about 2 minutes). Pour mixture into a 9x13 glass dish. Place bread in mixture and allow to stand for 2 minutes, turning twice to coat each side. Remove slices from liquid. Over medium heat, in a large skillet, heat 1 tbsp oil. When pan is hot add 3 slice of bread and cook until golden, about 3 minutes. Turn over and cook about another 2 minutes.
