French Onion Soup 1 Tbsp. vegetable oil 4 large onions, thinly sliced 3 Tbsp. dark (red) miso 2 cups water 4 slices French bread, cubed (day-old is good) 1 cup reduced-fat swiss cheese, shredded (part-skim mozzarella works) Heat a soup pot or large skillet over medium heat. Add oil and onions, tossing to combine. Cook over very low heat, stirring every 15 minutes, until the onions are limp and brown. In a separate bowl, dissolve the miso in the water. Add mixture to onions. Bring to a boil, stir, and remove from heat. Preheat broiler. Pour soup into oven-proof bowls. Add bread to soup, and sprinkle cheese over bread. Broil until cheese is melted and bubbly. Serves 4. Printable version: french-onion-soup02.txt.
