Alfredo with Soy 1 onion, chopped 1 clove garlic minced 2 tsp. veg. oil 2 cups soymilk 1 cup veg broth 3 tblsp all purpose flour 1/2 tsp salt some black pepper 1/2 cup grated parmesan cheese 1 lb. dry fettucine pasta optional (16 oz broccoli florets or fresh green peas) In a medium saucepan, heat oil over medium heat. Add onion and garlic, and saute until golden brown. In a small saucepan stir together milk, veg broth, flour, salt and pepper over low heat until smooth and thick. Stir into onion mixture. Continue to cook over medium low heat, stirring frequently unitl sauce is thick. Stir in parmesan cheese. Meanwhile cook the pasta. If you like add the peas or brocoli to the water for the last few minutes to cook al dente. Drain the pasta and vegetables, toss with the sauce and serve. Printable version: fettucini02.txt.
