Crispy Tofu

Crispy tofu Fingers 

1 block extra firm Tofu 
1 1/2 cups (approx)dry bread crumbs 
1 egg (vegan substitute = 1/4 cup water whisked with about 3T flour)
1 T herbs 
1/4 cup Parmesan cheese (optional)
Oil Spray 
 
Slice tofu block in 1/2 inch slices - lay them on several layers
of paper towel, cover with more towels & a weighted plate - 15
minutes is fine.

While tofu is draining, beat the egg or the flour/water mix in a
small flat bowl.  Mix the herbs of choice with the bread crumbs &
Parm.

Cut the tofu slabs into sticks - should be about 3" x 3/4" x 1/2"
thick.

Roll the sticks in the egg wash & then in the crumb coating.  Place
on lightly oiled cookie sheet.  Lightly spray tops with oil.

Bake at 400 degrees until bottoms start to brown - about 8 minutes.
Carefully turn them over with a spatula.  They are done when all
sides are nice & crispy - serve hot with dipping sauce of your
choice.

Variation - if the bread crumbs are really really fine, toss in a
few tablespoons of cornmeal.
