Special K Loaf / Pecan Loaf

1 large onion finely chopped
1/4 cup margarine 
4 eggs well beaten
1 pint cottage cheese
3 - 4 teaspoons McKaye's Chicken Seasoning
1 cup finely ground pecans (pecan meal)
1/2 cup milk
4 cups Special K cereal

Saute finely chopped onion in the 1/4 cup of margarine set aside.
In mixing bowl combine the eggs, cottage cheese, chicken seasoning,
1/2 cup milk, and pecan meal, mix well.  Stir in  the sauted onion
and margarine when well blended, fold in the 4 cups of cereal.

Place in a covered baking dish.  Bake at 350 degrees for 45 minutes
covered, un cover and bake an additional 10 minutes.

To lower the fat content, do one or more of the following:  saute
your onions in 1/4 cup water, use low fat cottage cheese, use only
the egg whites instead of the whole egg and use skim milk or water
in place of the whole milk.
