CORNMEAL PANCAKES 1 cup white or yellow cornmeal 1 teaspoon salt 1 cup boiling water 2 tablespoons rice syrup 1 tablespoon ground flax seed 1/2 cup soy milk or equivalent amount of blended silken tofu and water 2 tablespoons vegetable oil, optional 1/2 cup all purpose flour 2 teaspoons baking powder Place cornmeal and salt in a medium bowl. Stir in boiling water and rice syrup. Cover these ingredients and allow them to stand for 10-15 minutes to soften. In the meantime, stir together flax seed, soymilk and oil. Add these ingredients to the corn meal mixture. Add flour and baking powder and stir well. Then cook them the way you normally cook pancakes. Printable version: cornmeal-pancakes02.txt.
