Cheesy Vegetable Spread 1 cup shredded Farmer cheese (4 oz) 3 Tbsp plain yogurt 1 tsp lemon juice 1 tsp soy sauce 1/4 cup chopped apple 1/4 cup chopped carrot 2 Tbsp finely chopped celery 2 Tbsp chopped pecans 2 Tbsp currants 1 Tbsp toasted wheat germ 1/2 tsp curry powder In food processor, process cheese, yogurt, lemon juice, and soy sauce until smooth. Stir in remaining ingredients. Use as a spread on crackers, whole wheat bread, or pita crisps, or stuffed into pita pockets. Makes 1 1/2 cups Variations: Substitute shredded Cheddar for the farmer cheese. Spread may be made in advance, and refrigerated 3-4 days. Printable version: cheese-veg-spread.txt.
