Veg Soup 1 head broccoli 1 Vegetarian "beef flavoured" stock cube ( ie Massel brand) 4 cups water approx 1/2 cup soy milk Remove the hardest bit of the stem of the broccoli (I keep all but the bottom). Wash and either place it in a saucepan whole or in pieces. If doing whole I cut the stem off and chop it smaller to keep the cooking time similar. Add water and stock cube. Cover and boil until quite tender. Puree. Just before serving add soy milk to give a creamy taste and texture. Can be made using cauliflower, carrots or zucchini, can also use a chicken stock cube but beef gives a better colour. Printable version: broccoli-soup02.txt.
