Black Bean Taco Salad 2 15-oz cans black beans, rinsed and drained 2 1/2 oz can sliced ripe olives, drained 2 medium tomatoes, seeded and chopped (1 1/2 cups) 1/3 c shredded Cheddar cheese 1/4 c chopped green onions (approx. 3) 1/4 c chopped fresh cilantro (optional) 2 T lime juice 1 t ground cumin 1/4 t freshly ground pepper 4 c chopped spinach or other greens Mix beans, olives, tomatoes, cheese, onions cilantro. Mix lime juice, cumin and pepper; toss with bean mixture. Serve on spinach (greens). 4-8 servings. Note: It makes lots and keeps in the refrigerator and is a nice travel meal.
