Black Bean Casserole (makes 6 servings) 1 tbsp olive oil 1 cup chopped onions 3/4 c. plus 2 tbsp yellow cornmeal (4 1/2 oz) 2 tsp chili powder 1 1/4 c. skim milk 1 pound can black beans, rinsed and drained 1 pound can whole kernel corn, drained 1 pound can stewed tomatoes 4-ounce can chopped green chilies, drained (I just used jalapenos) 1/4 c. shredded lowfat Cheddar cheese Preheat oven to 350F. Lightly oil an 8-inch square baking pan or spray with a nonstick cooking spray. In a large bowl, combine all ingredients, except Cheddar cheese. Mix well. Place in prepared pan. Sprinkle with Cheddar cheese. Bake uncovered for 45 minutes. Printable version: black-bean-casserole.txt.
