BASIC QUICK MIX 6 1/2 cups whole wheat or whole-wheat pastry flour 1 1/2 cups soy flour 1 tbsp salt, or to taste 1 cup instant dry milk 1/3 cup baking powder 2 1/2 cups wheat germ Combine and mix thoroughly. Store in a tightly covered jar in the refrigerator. BISCUITS 1/3 cup oil or melted butter 2/3 cup milk or buttermilk or yogurt 2 1/4 cups Quick Mix Turn out on floured board, knead lightly. Pat or roll 1 inch thick; cut with biscuit cutter and place on greased baking sheet. Or cut in triangles, fill with brown sugar and cinnamon, and roll up. Bake at 450 degrees Fahrenheit for 12 to 15 minutes. Printable version: biscuit-mix02.txt.
