BROAD BEAN AND TOFU DIP 500gms fresh or frozen broad beans 250gms soft tofu, chopped 2 tblspns orange juice 1 tblspn chopped fresh basil Boil, steam or micrwave beans until soft, cool. Remove skin from beans and discard. Blend or process all ingredients until smooth, spoon onto serving dish and refrigerate for 1 hour before serving. Serve with fresh crunchy vegetables.
