Bean Burgers
Yield: 6 - 5" burgers  
  
1/2 c. minced green onions
1 1/2 T. minced garlic
2 T. white wine or vegetable stock
29 oz. can cooked drained pinto beans
3/4 c. cracker meal
2 egg whites
1/2 c. chopped fresh parsley
2 T seasoned rice vinegar
1/2 t. Spike seasoning powder
 
Preheat the oven to 350 degrees F.

In a small non-stick saute pan, braise the onions and garlic in
the white wine until soft.

In a medium bowl, combine the sauteed onions and garlic, beans,
cracker meal, egg whites, parsley, vinegar, and seasoning powder.
Mash well with a fork or potato masher until blended but not entirely
smooth.

On a parchment-lined non-stick baking sheet, drop the mixture by
1/2 c.  (I use 1/3 c.) amounts and flatten gently with a spoon to
form six 5" "burgers".  Bake for 25 minutes, or until set and
beginning to brown lightly.  Serve hot.
