Mushroom Barley Bake

2-3 Tbsp butter or vegetable oil
2 large onions, sliced
salt and pepper
1 cup medium pearl barley
8 oz sliced mushrooms
2 1/2 cups vegetable stock
1/2 cup shredded swiss or mozarella or 1/4 Cup freshly grated parmesan

Preheat oven to 350. Melt butter over medium low heat. Add onions.
Saute 7 minutes or until begin to turn golden Add barley. Saute 1
minute. Add mushrooms. Saute 2 minutes.

Grease a 6 cup casserole Spoon mixture into casserole Add stock to
saute pan. bring to boil Salt and pepper to taste. Stir stock into
barley mixture. Cover and bake one hour, stirring every 15 minutes.
Remove from oven, fluff with fork. Raise temp to 400. Sprinkle with
cheese. Bake 10 minutes, or until cheese melts.
