Achards de ligumes for 6 people 250g carrots 250g cabbage 250g cauliflower 250g beans (green) 7 large chilli peppers 50g ginger 1 large onion juice of 1 lemon 1 spoon saffron salt Peel the vegetable:cut into fine sticks. Separate the cauliflower into small flowers. Remove seeds from chilli peppers, cut into fine strips. Boil the veges for 1 minute. Strain. Chop the onion. Peel the ginger. Heat the oil: Put in the chopped onion then add the ginger, saffron and vegetables. Brown for 1 to 2 minutes. Add the lemon juice. Serve as an accompaniment or an hors-d'oeuvre.
