Zucchini Italiano

4 to 6 small, tender zucchinis (about 5 - 6" long), sliced thin
1 large can diced tomatoes
1 to 2 medium onions, peeled and diced
2 Tbsp. dried basil (or fresh)
1 Tbsp. dried oregano
1 to 2 cloves garlic, peeled and minced
1/4 cup lemon juice
Salt and pepper to taste

Mix all ingredients in a medium saucepan, and simmer over low heat
until the onions are transparent. An excellent accompaniment to
most any meal, especially as a side dish with pasta.
