Yellow Squash Serving Size : 8 6 small yellow squash, sliced 1/4 pound butter 1 med onion, chopped 3 eggs, well beaten 3 tablespoons heavy cream 2 tablespoons sugar 1 tablespoon flour salt and pepper, to taste Cook the squash in a small amount of water until tender. Drain. Melt the butter in a large skillet. Saute the onion until tender. Add the drained squash and continue to cook very slowly, stirring often, until all the liquid has evaporated.
