Yellow Squash
Serving Size  : 8

6 small yellow squash, sliced
1/4 pound butter
1 med onion, chopped
3 eggs, well beaten
3 tablespoons heavy cream
2 tablespoons sugar
1 tablespoon flour
salt and pepper, to taste

Cook the squash in a small amount of water until tender.  Drain.
Melt the butter in a large skillet.  Saute the onion until tender.
Add the drained squash and continue to cook very slowly, stirring
often, until all the liquid has evaporated.   Add the remaining
ingredients.  Cook until very dry.
