CHILLI VEGETABLE PATTIES 4 large potatoes 30g butter 1 cup grated tasty cheese 2 eggs, lightly beaten dried breadcrumbs butter, ghee, or oil for frying 1 carrot 1 zucchini, peeled 1 small red pepper 1 small green pepper 1 celery stalk 30g butter 1 clove crushed garlic 1 red chilli, finely chopped 2 tsp yellow mustard seeds 1/4 cup water 2 tsp flour 2/3 cup chutney of your choice Cook the potatoes until tender, mashed well with butter, stir in the cheese; cool to room temperature. Shape a Tbs pof the mixture into a patty shape, top with a Tbsp of the filling. Place another Tbsp of the potato mixture, shaped as a patty on top of the filling. Mould around and seal completely. Coat lightly with flour, dip in egg, then breadcrumbs. Heat your choice of fat in pan and fry patties until golden brown. Printable version: vegetable-patties.txt.
