Vegetable Toss Serves 16 1 pound broccoli florets 1 pound caulifloer florets 1/2 pound green beans, trimmed 1 large red pepper, cut into 1/2 inch strips 1/2 cup Italian dressing 1/3 cup shredded parmesan cheese Add broccoli, cauliflower and beans to boiling water in a large pot. Cook 2 minutes or until vegetables are bright in color and still crisp. Do not overcook. Drain and refresh with ice cold water. Drain. Place vegetables in a large serving bowl. Add pepper strips, cover. Refrigerate. Toss veggies with drissing and cheese just before serving. Printable version: veg-toss.txt.
