Baked Turnip Puff 1 medium (2 1/2 lb.) turnip, cooked and mashed 2 Tbsp. butter 1/2 tsp. salt dash of pepper 2 tsp. sugar 1/2 tsp. flour dash of rosemary (optional) 2 eggs, separated Blend well the turnip, butter, salt, pepper, sugar and flour. Beat 2 egg whites until stiff; set aside. Beat 2 egg yolks until light, gradually stir into seasoned turnip. Fold in egg whites. Pour into greased 1 quart casserole. Bake uncovered at 350 degrees for 30 to 35 minutes or until puffy and lightly browned. Printable version: turnip-puff02.txt.
